Manual destemming and pressing with vertical press. The must is fermented in 50 litre caratelli oak barrels with no added yeasts and sulphite for at least four months.
12 months in medium sized oak barrels, then bottle
The colour is bright amber. On the nose it is aromatic and complex, with notes of candied apricot and honey, with thyme and rosemary. In the mouth it is full and intense, pleasantly sweet and very balanced on the sapid component.
Delicious with medium-aged cheese, fine biscuits, pastries and dark chocolate. It is a true ‘’Meditation Wine’’ and it is also excellent by itself.
