The grapes are dried on \u2018graticci\u2019, in the sun and wind for more than 3 months. The resulting must is fermented in 50 litre caratelli barrels with no added yeasts and sulphites.  Delicious with cheese with herbs, fine biscuits, pastries and dark chocolate.
